1 large onion, chopped
2 cloves of garlic, minced
500 grams of fresh spinach
1 liter of vegetable broth
100 grams of sun-dried tomatoes
Salt and pepper to taste
A dash of olive oil
Croutons and fresh basil for garnish

Instructions
1Heat some olive oil in a large soup pot.
2Add the onion and garlic and sauté until translucent.
