1 cup quinoa
2 cups water
1/2 cucumber, diced
1 red bell pepper, diced
1/2 cup kalamata olives, halved
1/4 cup feta cheese, crumbled
2 tablespoons fresh parsley, chopped
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste

Instructions
1Combine quinoa and water in a pot. Bring to a boil, reduce heat and let simmer for 15 minutes, or until all water is absorbed. Allow to cool.
2In a large bowl, combine the cooked quinoa, cucumber, bell pepper, olives, feta, and parsley.
3In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and mix well.
4Let the salad rest in the refrigerator for half an hour before serving to allow the flavors to blend. Enjoy!
