Ingredients

  • cup quinoa
  • cups water
  • 1/2 cucumber, diced
  • red bell pepper, diced
  • 1/2 cup kalamata olives, halved
  • 1/4 cup feta cheese, crumbled
  • tablespoons fresh parsley, chopped
  • tablespoons olive oil
  • tablespoon lemon juice
  •  Salt and pepper to taste

Instructions

  1. 1 Combine quinoa and water in a pot. Bring to a boil, reduce heat and let simmer for 15 minutes, or until all water is absorbed. Allow to cool.
  2. 2 In a large bowl, combine the cooked quinoa, cucumber, bell pepper, olives, feta, and parsley.
  3. 3 In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and mix well.
  4. 4 Let the salad rest in the refrigerator for half an hour before serving to allow the flavors to blend. Enjoy!
