Broccoli Soup with Smoked Salmon and Dill

Ingredients

  • large broccoli, cut into florets
  • large potato, peeled and diced
  • onion, finely chopped
  • cloves of garlic, minced
  • liter vegetable broth
  • 200 grams smoked salmon, sliced
  •  Fresh dill, finely chopped
  •  Olive oil
  •  Salt and pepper to taste

Instructions

  1. 1 Heat a dash of olive oil in a large pot and sauté the onion and garlic until soft.
  2. 2 Add the broccoli and potato and stir for a few minutes.
  3. 3 Pour in the broth and let it simmer for about 20 minutes, until the broccoli and potato are tender.
  4. 4 Puree the soup with an immersion blender until smooth. Season with salt and pepper to taste.
