Instructions
1Preheat the oven to 180 degrees Celsius and place the cherry tomatoes and cashews on a baking sheet. Drizzle with 1 tablespoon of olive oil and roast for 10-15 minutes, or until the tomatoes are soft and the nuts are golden brown.
2Cook the spaghetti according to the package instructions. Drain and set aside.
3Meanwhile, make the avocado sauce by blending the avocados, garlic, lemon juice, salt, pepper, and the remaining olive oil in a blender until creamy.
