300 grams whole wheat penne
1 red bell pepper
1 zucchini
1 red onion
2 cloves of garlic
200 grams feta cheese
2 tablespoons olive oil
Salt and pepper to taste
Handful of fresh basil

Instructions
1Preheat the oven to 200 degrees Celsius and cook the penne according to package instructions.
2Cut the bell pepper, zucchini, and red onion into large pieces and place them on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast the vegetables in the oven for 20 minutes.
3While the vegetables are roasting, crumble the feta and add it to a blender. Add a little pasta water and blend until creamy.
