Ingredients

  • 400 g fresh raspberries
  • cans full-fat coconut milk (400ml each, chilled)
  • tablespoons honey
  • teaspoon vanilla extract
  • 200 g gluten-free cookies, crumbled
  •  Extra raspberries and mint leaves for decoration

Instructions

  1. 1 Open the chilled cans of coconut milk and scoop out the thick cream from the top into a bowl.
  2. 2 Add the honey and vanilla extract to the coconut cream and whisk until smooth.
  3. 3 Divide half of the cookie crumbs among 4 glasses.
  4. 4 Then divide half of the raspberries over the cookie crumbs.
  5. 5 Divide half of the coconut cream over the raspberries.
  6. 6 Repeat these layers one more time.
  7. 7 Decorate the tops with extra raspberries and mint leaves.
