Ingredients

  • 200 grams whole wheat digestive biscuits
  • 100 grams coconut oil
  • 500 grams low-fat quark
  • 200 grams fresh strawberries
  • tablespoons Stevia
  • teaspoon vanilla extract
  • eggs

Instructions

  1. 1 Preheat the oven to 180 degrees.
  2. 2 Crumble the biscuits in a food processor and add the melted coconut oil. Mix well.
  3. 3 Line a springform pan with parchment paper and pour in the biscuit mixture. Press down firmly with the back of a spoon.
  4. 4 Bake the base in the preheated oven for 10 minutes. Remove from the oven and let it cool.
  5. 5 In a large bowl, whisk together the quark, Stevia, vanilla extract, eggs, and salt until smooth.
  6. 6 Pour the quark mixture over the cooled base in the springform pan.
  7. 7 Bake the cheesecake in the oven for 45 minutes. Allow to cool completely.
  8. 8 Slice the strawberries and arrange them on top of the cooled cheesecake. Cut into pieces and serve!
