200 grams whole wheat digestive biscuits
100 grams coconut oil
500 grams low-fat quark
200 grams fresh strawberries
8 tablespoons Stevia
1 teaspoon vanilla extract
2 eggs

Instructions
1Preheat the oven to 180 degrees.
2Crumble the biscuits in a food processor and add the melted coconut oil. Mix well.
3Line a springform pan with parchment paper and pour in the biscuit mixture. Press down firmly with the back of a spoon.
4Bake the base in the preheated oven for 10 minutes. Remove from the oven and let it cool.
5In a large bowl, whisk together the quark, Stevia, vanilla extract, eggs, and salt until smooth.
6Pour the quark mixture over the cooled base in the springform pan.
7Bake the cheesecake in the oven for 45 minutes. Allow to cool completely.
8Slice the strawberries and arrange them on top of the cooled cheesecake. Cut into pieces and serve!
