Delicious Vegetarian Lasagna with Spinach and Ricotta
This vegetarian lasagna with spinach and ricotta is a delicious comfort dish. A creamy filling of fresh spinach and ricotta between layers of lasagna, topped with a crispy crust. Whoever says vegetarian cooking is boring, has not tried this recipe yet!

Ingredients
400 grams fresh spinach
200 grams ricotta
1 onion, finely chopped
2 cloves of garlic, finely chopped
1 pack of lasagna sheets
400 grams sieved tomatoes
200 grams grated cheese
1 tablespoon olive oil
salt and pepper to taste

Instructions
1Preheat the oven to 180 degrees Celsius.
2Heat the olive oil in a large pan and sauté the onion and garlic until soft.
3Add the spinach and stir until wilted.
4Add the ricotta to the pan and mix well. Season with salt and pepper.
5Cover the bottom of a baking dish with a layer of sieved tomatoes.
6Place a layer of lasagna sheets on top, followed by the spinach-ricotta mixture.
7Repeat these steps until all ingredients are used, but make sure to end with a layer of tomato sauce.
8Sprinkle the lasagna with the grated cheese and bake in the oven for 30 minutes, or until the cheese is golden brown and bubbly.
9Remove the lasagna from the oven and let it rest for 5 minutes before slicing. Enjoy!
