Delicious Vegetarian Lasagna with Spinach and Ricotta

This vegetarian lasagna with spinach and ricotta is a delicious comfort dish. A creamy filling of fresh spinach and ricotta between layers of lasagna, topped with a crispy crust. Whoever says vegetarian cooking is boring, has not tried this recipe yet!

Ingredients

  • 400 grams fresh spinach
  • 200 grams ricotta
  • onion, finely chopped
  • cloves of garlic, finely chopped
  • pack of lasagna sheets
  • 400 grams sieved tomatoes
  • 200 grams grated cheese
  • tablespoon olive oil
  •  salt and pepper to taste

Instructions

  1. 1 Preheat the oven to 180 degrees Celsius.
  2. 2 Heat the olive oil in a large pan and sauté the onion and garlic until soft.
  3. 3 Add the spinach and stir until wilted.
  4. 4 Add the ricotta to the pan and mix well. Season with salt and pepper.
  5. 5 Cover the bottom of a baking dish with a layer of sieved tomatoes.
  6. 6 Place a layer of lasagna sheets on top, followed by the spinach-ricotta mixture.
  7. 7 Repeat these steps until all ingredients are used, but make sure to end with a layer of tomato sauce.
  8. 8 Sprinkle the lasagna with the grated cheese and bake in the oven for 30 minutes, or until the cheese is golden brown and bubbly.
  9. 9 Remove the lasagna from the oven and let it rest for 5 minutes before slicing. Enjoy!
