Ingredients

  • tablespoon olive oil
  • onion, finely chopped
  • cloves of garlic, minced
  • carrots, diced
  • stalks of celery, chopped
  • zucchini, diced
  • 200 g green beans, chopped
  • 400 g can of cannellini beans, rinsed and drained
  • liter vegetable broth
  • 200 g pasta of your choice
  • 200 g fresh spinach
  •  Salt and pepper to taste
  •  Grated Parmesan cheese (optional)

Instructions

  1. 1 Heat the olive oil in a large pot over medium-high heat.
  2. 2 Add the onion and garlic and sauté until soft.
  3. 3 Add the carrots, celery, zucchini, and green beans and cook for another 5 minutes.
  4. 4 Add the cannellini beans and vegetable broth. Bring to a boil.
  5. 5 Add the pasta and cook according to package instructions.
