4 organic lemons
200 g sugar
4 eggs
200 ml whipping cream
200 g fresh blueberries
A few sprigs of fresh mint

Instructions
1Zest the lemons and squeeze the juice.
2Whisk the eggs and sugar in a heatproof bowl until light and creamy.
3Add the lemon juice and zest to the egg mixture.
4Place the bowl over a pan of gently simmering water and stir constantly until the mixture thickens. This will take about 20 minutes.
5Remove the bowl from the heat and let the lemon mixture cool.
6Meanwhile, whip the cream until soft peaks form.
