Ingredients

  • organic lemons
  • 200 g sugar
  • eggs
  • 200 ml whipping cream
  • 200 g fresh blueberries
  •  A few sprigs of fresh mint

Instructions

  1. 1 Zest the lemons and squeeze the juice.
  2. 2 Whisk the eggs and sugar in a heatproof bowl until light and creamy.
  3. 3 Add the lemon juice and zest to the egg mixture.
  4. 4 Place the bowl over a pan of gently simmering water and stir constantly until the mixture thickens. This will take about 20 minutes.
  5. 5 Remove the bowl from the heat and let the lemon mixture cool.
  6. 6 Meanwhile, whip the cream until soft peaks form.
  7. 7 Gently fold the whipped cream into the cooled lemon mixture.
  8. 8 Divide the mousse among 4 dessert glasses and refrigerate for at least 2 hours to set.
