200 grams quinoa
2 ripe avocados
250 grams cherry tomatoes
1 cucumber
2 spring onions
handful of fresh coriander
juice of 1 lime
3 tablespoons olive oil
salt and pepper to taste

Instructions
1Cook the quinoa according to the instructions on the package. Let it cool afterwards.
2Cut the avocados, cherry tomatoes, cucumber, and spring onions into small pieces. Mix them in a large bowl.
3Add the cooled quinoa to the vegetables in the bowl.
4Make a dressing with the olive oil, lime juice, salt, and pepper. Mix this well through the salad.
5Finely chop the coriander and sprinkle it over the salad.
6Serve the salad immediately, or refrigerate it until ready to serve.
