Ingredients

  • 200 grams quinoa
  • ripe avocados
  • 250 grams cherry tomatoes
  • cucumber
  • spring onions
  •  handful of fresh coriander
  •  juice of 1 lime
  • tablespoons olive oil
  •  salt and pepper to taste

Instructions

  1. 1 Cook the quinoa according to the instructions on the package. Let it cool afterwards.
  2. 2 Cut the avocados, cherry tomatoes, cucumber, and spring onions into small pieces. Mix them in a large bowl.

  4. 4 Make a dressing with the olive oil, lime juice, salt, and pepper. Mix this well through the salad.
