4 tablespoons honey
2 eggs
100 ml milk (or plant-based alternative)

Instructions
1Preheat your oven to 180 degrees and grease a muffin tin or use muffin liners.
2Peel the apples, remove the core, and grate them finely.
3In a large bowl, mix the oats, baking powder, cinnamon, and a pinch of salt.
4Add the grated apple, eggs, honey, and milk. Stir everything together until you get a nice batter.
5Divide the batter into the muffin cups and bake in the preheated oven for about 20-25 minutes until they are golden brown and cooked through.
