500 ml Greek yogurt
4 gelatin leaves
100 ml milk
2 tablespoons honey
1 ripe mango
Juice of half a lemon
Fresh mint leaves (optional)

Instructions
1Soak the gelatin leaves in a bowl of cold water until they soften.
2Meanwhile, heat the milk with the honey in a saucepan over low heat until the honey is completely dissolved.
3Squeeze out the gelatin leaves and add them to the warm milk. Stir well until the gelatin is completely dissolved.
4Remove the saucepan from the heat and stir the Greek yogurt into the milk. Make sure everything is well combined.
5Pour the mixture into four dessert cups and let it set in the refrigerator for at least 4 hours.
6While the pannacotta sets, make the mango coulis. Peel the mango, cut the flesh into pieces, and puree in a blender with the lemon juice. You can strain the coulis for an extra smooth result.
7Pour the mango coulis over the set pannacottas and garnish with a mint leaf. Enjoy!
