Fruity Yogurt Pannacotta with Mango Coulis

Ingredients

  • 500 ml Greek yogurt
  • gelatin leaves
  • 100 ml milk
  • tablespoons honey
  • ripe mango
  •  Juice of half a lemon
  •  Fresh mint leaves (optional)

Instructions

  1. 1 Soak the gelatin leaves in a bowl of cold water until they soften.
  2. 2 Meanwhile, heat the milk with the honey in a saucepan over low heat until the honey is completely dissolved.
  3. 3 Squeeze out the gelatin leaves and add them to the warm milk. Stir well until the gelatin is completely dissolved.
  4. 4 Remove the saucepan from the heat and stir the Greek yogurt into the milk. Make sure everything is well combined.
  5. 5 Pour the mixture into four dessert cups and let it set in the refrigerator for at least 4 hours.
  6. 6 While the pannacotta sets, make the mango coulis. Peel the mango, cut the flesh into pieces, and puree in a blender with the lemon juice. You can strain the coulis for an extra smooth result.
  7. 7 Pour the mango coulis over the set pannacottas and garnish with a mint leaf. Enjoy!
