Ingredients
4 chicken breasts
2 heads of romaine lettuce, washed and torn into pieces
4 slices of whole wheat bread
2 tablespoons of olive oil
50 grams of grated Parmesan cheese
For the dressing:
1 egg yolk
1 clove of garlic, minced
1 tablespoon of mustard
1 tablespoon of white wine vinegar
100 ml of olive oil
Salt and pepper to taste

Instructions
1Preheat the oven to 180 degrees Celsius. Cut the whole wheat bread into cubes and place them on a baking sheet. Drizzle with olive oil and roast for 10-15 minutes in the oven until golden brown and crispy.
2Meanwhile, cook the chicken breasts in a pan with a little oil until they are cooked and golden brown. Let them rest before slicing them.
3For the dressing, whisk the egg yolk, garlic, mustard, and vinegar together in a bowl. Slowly add the olive oil while whisking. Season with salt and pepper.
4Divide the lettuce onto 4 plates, place the slices of chicken on top, drizzle with the dressing, and sprinkle with the grated Parmesan cheese. Finally, add the roasted croutons. Enjoy!
