2 cans of chickpeas (drained)
1 large onion (finely chopped)
3 cloves of garlic (pressed)
1 red bell pepper (diced)
400 ml coconut milk
2 tablespoons curry paste
1 teaspoon turmeric
1 teaspoon cumin
1 cauliflower
2 tablespoons olive oil
Salt and pepper to taste

Instructions
1Heat the olive oil in a large pan and sauté the onion and garlic until translucent.
2Add the red bell pepper, curry paste, turmeric, and cumin. Stir well and let simmer for a few minutes.
3Add the chickpeas and coconut milk, and let it simmer gently for 15 minutes.
4Meanwhile, prepare the cauliflower rice. Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower has the texture of rice.
5Heat a little olive oil in another pan and cook the cauliflower rice for 5-7 minutes over medium-high heat. Season with salt and pepper.
