Healthy Chickpea Curry with Cauliflower Rice

Ingredients

  • cans of chickpeas (drained)
  • large onion (finely chopped)
  • cloves of garlic (pressed)
  • red bell pepper (diced)
  • 400 ml coconut milk
  • tablespoons curry paste
  • teaspoon turmeric
  • teaspoon cumin
  • cauliflower
  • tablespoons olive oil
  •  Salt and pepper to taste

Instructions

  1. 1 Heat the olive oil in a large pan and sauté the onion and garlic until translucent.
  2. 2 Add the red bell pepper, curry paste, turmeric, and cumin. Stir well and let simmer for a few minutes.
  3. 3 Add the chickpeas and coconut milk, and let it simmer gently for 15 minutes.
  4. 4 Meanwhile, prepare the cauliflower rice. Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower has the texture of rice.
  5. 5 Heat a little olive oil in another pan and cook the cauliflower rice for 5-7 minutes over medium-high heat. Season with salt and pepper.
