2 tablespoons olive oil
1 onion, finely chopped
2 carrots, peeled and sliced
2 stalks of celery, sliced
2 cloves of garlic, finely chopped
400 g can of cannellini beans, drained
1 liter vegetable broth
400 g can of diced tomatoes
100 g fresh spinach, roughly chopped
100 g macaroni
Salt and pepper to taste
Grated Parmesan cheese for serving

Instructions
1Heat the olive oil in a large pan over medium-high heat.
2Add the onion, carrot, celery, and garlic. Cook for 5-7 minutes until the vegetables are soft.
