200 g red lentils
1 tablespoon oil
1 onion, finely chopped
2 cloves of garlic, finely chopped
1 teaspoon grated fresh ginger
1 teaspoon turmeric
1 teaspoon cumin
1 teaspoon coriander
1 can of diced tomatoes
1 liter vegetable broth
200 g basmati rice
4 pieces of naan bread
Fresh coriander for garnish

Instructions
1Rinse the lentils under cold water until the water is clear.
2Heat the oil in a large pan and add the onion, garlic, and ginger. Cook until soft.
3Add the turmeric, cumin, and coriander and cook for another minute.
4Add the diced tomatoes, lentils, and vegetable broth. Bring to a boil and let simmer for 20 minutes or until the lentils are soft.
5Meanwhile, cook the basmati rice according to the package instructions.
6Heat the naan bread according to the package instructions.
7Serve the dahl with the rice and naan bread, and garnish with fresh coriander. Enjoy your meal!
