Ingredients

  • large onion, finely chopped
  • carrots, diced
  • stalks of celery, chopped
  • cloves of garlic, minced
  • zucchini, diced
  • 400 grams canned tomatoes
  • liter vegetable broth
  • 100 grams whole wheat pasta
  • 200 grams canned cannellini beans, rinsed and drained
  • 100 grams smoked ham, diced (optional)
  • tablespoons olive oil
  •  Salt and pepper to taste
  •  Fresh chopped parsley for garnish

Instructions

  1. 1 Heat the olive oil in a large pan over medium-high heat.
  2. 2 Add the onion, carrots, celery, and garlic, and sauté until the vegetables are soft, about 10 minutes.
  3. 3 Add the zucchini and tomatoes, and stir well. Let it simmer for 5 minutes.
