Ingredients

  • 300 grams risotto rice
  • liter warm fish stock
  • 200 grams mixed seafood (mussels, prawns, squid)
  • onion, finely chopped
  • cloves of garlic, finely chopped
  • 100 ml dry white wine
  • tablespoons olive oil
  •  a handful of fresh parsley, finely chopped
  •  salt and pepper to taste

Instructions

  1. 1 Heat the olive oil in a large pan over medium-high heat.
  2. 2 Add the onion and garlic and cook until soft, but not browned.
  3. 3 Add the risotto rice and stir well to coat all grains with the oil.
  4. 4 Add the white wine and stir until fully absorbed by the rice.
  5. 5 Begin adding the warm fish stock, one ladle at a time, stirring constantly. Wait until each ladle of stock is absorbed before adding the next.
  6. 6 Add the mixed seafood to the risotto halfway through the cooking process.
  7. 7 Continue adding stock and stirring until the rice is cooked, this takes about 20-25 minutes.
  8. 8 Season with salt and pepper and stir in the fresh parsley.
  9. 9 Serve the risotto immediately, accompanied by a fresh green salad for a complete meal. Buon appetito!
