300 grams risotto rice
1 liter warm fish stock
200 grams mixed seafood (mussels, prawns, squid)
1 onion, finely chopped
2 cloves of garlic, finely chopped
100 ml dry white wine
2 tablespoons olive oil
a handful of fresh parsley, finely chopped
salt and pepper to taste

Instructions
1Heat the olive oil in a large pan over medium-high heat.
2Add the onion and garlic and cook until soft, but not browned.
3Add the risotto rice and stir well to coat all grains with the oil.
4Add the white wine and stir until fully absorbed by the rice.
5Begin adding the warm fish stock, one ladle at a time, stirring constantly. Wait until each ladle of stock is absorbed before adding the next.
6Add the mixed seafood to the risotto halfway through the cooking process.
7Continue adding stock and stirring until the rice is cooked, this takes about 20-25 minutes.
8Season with salt and pepper and stir in the fresh parsley.
