Italian Grilled Chicken with Fresh Arugula Salad

This is a true Italian classic that you can easily make at home. We start by grilling the chicken, which comes with a fresh arugula salad and crispy oven-baked potatoes. This dish is full of flavor and yet very light and healthy. Ideal for a weeknight dinner!

Ingredients

  • chicken breasts
  • lemons
  • cloves of garlic
  • bunch of fresh basil
  • handfuls of arugula
  • 500 grams of baby potatoes
  • tablespoons of olive oil
  •  Salt and pepper to taste

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius.
  2. 2 Cut the baby potatoes in half lengthwise and place them on a baking sheet. Drizzle with half of the olive oil, salt, and pepper. Bake for 30 minutes until golden brown.
  3. 3 Rub the chicken breasts with garlic, the remaining olive oil, salt, and pepper. Grill them in a grill pan over medium-high heat until cooked through.
  4. 4 Meanwhile, make the salad by mixing the arugula, juice of a lemon, basil, salt, and pepper.
  5. 5 Serve the grilled chicken with the arugula salad and the potatoes. Enjoy!
