300 g Risotto rice
1 liter Vegetable broth
2 cloves of Garlic
1 large Onion
200 g Fresh Spinach
100 g Cherry Tomatoes
100 g Mushrooms
50 g Parmesan cheese
2 tablespoons Olive oil
Salt and Pepper to taste

Instructions
1Heat the olive oil in a large pan over medium-high heat.
2Add the chopped onion and garlic and cook until soft.
3Add the risotto rice and cook until the grains are translucent.
4Add a ladle of vegetable broth and stir until fully absorbed by the rice. Repeat this process until the rice is cooked, about 20 minutes.
