Ingredients

  • 300 g Risotto rice
  • liter Vegetable broth
  • cloves of Garlic
  • large Onion
  • 200 g Fresh Spinach
  • 100 g Cherry Tomatoes
  • 100 g Mushrooms
  • 50 g Parmesan cheese
  • tablespoons Olive oil
  •  Salt and Pepper to taste

Instructions

  1. 1 Heat the olive oil in a large pan over medium-high heat.
  2. 2 Add the chopped onion and garlic and cook until soft.
  3. 3 Add the risotto rice and cook until the grains are translucent.
  4. 4 Add a ladle of vegetable broth and stir until fully absorbed by the rice. Repeat this process until the rice is cooked, about 20 minutes.
  5. 5 Then add the chopped vegetables, salt, and pepper and cook for another 5 minutes.
