Ingredients

  • 200 grams mixed nuts (almonds, walnuts)
  • 50 grams melted coconut oil
  • 200 grams cream cheese
  • 200 grams Greek yogurt
  • eggs
  •  Sweetener of choice (e.g. Stevia)
  • teaspoon vanilla extract
  • 200 grams fresh berries (strawberries, blueberries, raspberries, blackberries)

Instructions

  1. 1 Preheat the oven to 180 degrees.
  2. 2 Finely grind the nuts in a food processor and mix them with the melted coconut oil. Press the mixture into a springform lined with parchment paper to form the base.
  3. 3 In a separate bowl, mix the cream cheese, Greek yogurt, eggs, sweetener, and vanilla extract. Beat the mixture until smooth.
  4. 4 Pour the cream cheese mixture over the nut base in the springform.
  5. 5 Bake the cheesecake in the oven for about 30-35 minutes, or until the edges are lightly golden brown and the center still slightly wobbly.
  6. 6 Allow the cheesecake to cool completely in the refrigerator (at least 4 hours, preferably overnight).
  7. 7 Garnish the cheesecake with the fresh berries before serving. Enjoy!
