2 tbsp olive oil
1 onion, finely chopped
2 cloves of garlic, finely chopped
1 tbsp ginger, grated
2 tsp turmeric
1 tsp cumin
1 tsp coriander
1 can of lentils (400g), drained and rinsed
1 can of coconut milk (400ml)
1 vegetable stock cube
1 cauliflower, cut into florets
Salt and pepper to taste
Fresh coriander for garnish

Instructions
1Heat the olive oil in a large pan. Add the onion and sauté until soft.
2Add the garlic and ginger and continue stirring until fragrant.
3Add the turmeric, cumin, and coriander. Stir well to distribute the spices evenly.
4Add the lentils, coconut milk, and stock cube. Let it simmer until the lentils are tender.
5Meanwhile, make the cauliflower rice. Put the cauliflower florets in a food processor and pulse until they have the texture of rice.
6Serve the lentil curry over the cauliflower rice. Garnish with fresh coriander and enjoy!
