Ingredients

  • tbsp olive oil
  • onion, finely chopped
  • cloves of garlic, finely chopped
  • tbsp ginger, grated
  • tsp turmeric
  • tsp cumin
  • tsp coriander
  • can of lentils (400g), drained and rinsed
  • can of coconut milk (400ml)
  • vegetable stock cube
  • cauliflower, cut into florets
  •  Salt and pepper to taste
  •  Fresh coriander for garnish

Instructions

  1. 1 Heat the olive oil in a large pan. Add the onion and sauté until soft.
  2. 2 Add the garlic and ginger and continue stirring until fragrant.
  3. 3 Add the turmeric, cumin, and coriander. Stir well to distribute the spices evenly.
  4. 4 Add the lentils, coconut milk, and stock cube. Let it simmer until the lentils are tender.
  5. 5 Meanwhile, make the cauliflower rice. Put the cauliflower florets in a food processor and pulse until they have the texture of rice.
  6. 6 Serve the lentil curry over the cauliflower rice. Garnish with fresh coriander and enjoy!
