200 g brown rice
400 g chicken breast
2 bell peppers, diced
1 cucumber, diced
1 red onion, finely chopped
2 cloves of garlic, finely chopped
juice and zest of 1 lemon
3 tablespoons olive oil
handful of fresh parsley, finely chopped
salt and pepper to taste

Instructions
1Cook the rice according to package instructions and let it cool.
2Heat a grill pan and grill the chicken breasts until cooked through. Let them cool and slice them into thin strips.
3In a large bowl, mix the cooled rice, grilled chicken, bell peppers, cucumber, red onion, and garlic.
4In a small bowl, mix the lemon juice, lemon zest, and olive oil. Season with salt and pepper to taste.
