Stuffed Avocado with Chicken and Greek Yogurt
These stuffed avocados are a party for your taste buds! They are creamy and packed with good fats and proteins. Perfect for a healthy lunch!

2 ripe avocados

200 grams cooked chicken breast

2 tablespoons Greek yogurt

1 tomato

1 spring onion

Salt and pepper to taste

2 teaspoons lemon juice

Fresh parsley for garnish
Instructions

Cut the avocados in half and remove the pit.

Scoop out a little bit of the avocado with a spoon and save the flesh.

Dice the chicken breast, tomato, and spring onion into small pieces.

Mix the chicken, tomato, spring onion, Greek yogurt, avocado flesh, lemon juice in a bowl. Season with salt and pepper.
