  • kg sweet potatoes
  • 200 g fresh spinach
  • 150 g soft goat cheese
  • red onions
  • cloves of garlic
  • tsp nutmeg
  •  Salt and pepper to taste

Instructions

  1. 1 Peel the sweet potatoes and cut them into large pieces.
  2. 2 Boil the sweet potatoes for about 20 minutes until they are soft.
  3. 3 Meanwhile, finely chop the onions and garlic and sauté them in a pan with a little oil.
  4. 4 Add the spinach to the pan and let it wilt.
  5. 5 Drain the sweet potatoes and mash them. Add the sautéed onion, garlic, and spinach.
  6. 6 Crumble the goat cheese and mix it into the mash. Season with nutmeg, salt, and pepper.
