1 kg sweet potatoes
200 g fresh spinach
150 g soft goat cheese
2 red onions
2 cloves of garlic
1 tsp nutmeg

Instructions
1Peel the sweet potatoes and cut them into large pieces.
2Boil the sweet potatoes for about 20 minutes until they are soft.
3Meanwhile, finely chop the onions and garlic and sauté them in a pan with a little oil.
4Add the spinach to the pan and let it wilt.
5Drain the sweet potatoes and mash them. Add the sautéed onion, garlic, and spinach.
6Crumble the goat cheese and mix it into the mash. Season with nutmeg, salt, and pepper.
7Serve the mash and enjoy! Don't worry if there is any leftover, this dish is also delicious for lunch the next day.
