200 g dark chocolate

11. Melt the chocolate au bain-marie. This is done by placing a pan with a little water on the stove, and placing a heatproof bowl on top. The chocolate in the bowl will melt from the steam of the water. Stir occasionally to prevent the chocolate from burning.
22. While the chocolate is melting, separate the eggs. Place the egg whites in a large bowl, and the yolks in a small bowl.
33. Add the sugar to the egg yolks and beat them until they become light in color.
44. Once the chocolate is fully melted, remove the bowl from the heat source and add the egg yolks with sugar. Mix everything well together.
