Ingredients

  • 200 grams rice noodles
  • 400 grams mixed seafood (e.g. mussels, squid rings, shrimp)
  • 16 large prawns
  • red bell pepper, thinly sliced
  • carrot, grated
  • cucumber, grated
  • spring onions, finely chopped
  •  For the dressing: 3 tablespoons soy sauce, 2 tablespoons fish sauce, 2 tablespoons lime juice, 1 tablespoon sesame oil, 1 teaspoon sugar, 1 red chili pepper, finely chopped

Instructions

  1. 1 Cook the rice noodles according to the instructions on the package. Drain and rinse under cold water. Let drain.
  2. 2 Fry the prawns and seafood in a hot pan with a little oil until cooked. Set aside.
  3. 3 Combine all the ingredients for the dressing in a bowl and mix well.
  4. 4 Mix the noodles, prawns, seafood, vegetables, and dressing in a large bowl.
