400 grams large shrimp, peeled and deveined
2 eggs, beaten
200 grams panko breadcrumbs
Salt and pepper to taste

2 mangoes, peeled and diced
1 red onion, finely chopped
1 jalapeño, finely chopped
Juice of 1 lime
A handful of fresh cilantro, finely chopped

Instructions
1Heat the oil in a large pan over medium-high heat.
2Season the shrimp with salt and pepper, dip them in the beaten eggs, and then coat them with the panko breadcrumbs.
3Fry the shrimp in the hot oil until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.
4Mix the mango, red onion, jalapeño, lime juice, and cilantro in a bowl to make the salsa.
