Ingredients

  • 400 grams large shrimp, peeled and deveined
  • eggs, beaten
  • 200 grams panko breadcrumbs
  •  Salt and pepper to taste
  •  Oil for frying
  • mangoes, peeled and diced
  • red onion, finely chopped
  • jalapeño, finely chopped
  •  Juice of 1 lime
  •  A handful of fresh cilantro, finely chopped

Instructions

  1. 1 Heat the oil in a large pan over medium-high heat.
  2. 2 Season the shrimp with salt and pepper, dip them in the beaten eggs, and then coat them with the panko breadcrumbs.
  3. 3 Fry the shrimp in the hot oil until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.
  4. 4 Mix the mango, red onion, jalapeño, lime juice, and cilantro in a bowl to make the salsa.
  5. 5 Serve the crispy shrimp with the mango salsa on the side. Enjoy!
