4 chicken fillets
2 tablespoons cornstarch
Sunflower oil for frying
1 red bell pepper
1 yellow bell pepper
2 spring onions
1 clove of garlic
For the sauce:
4 tablespoons ketchup
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons brown sugar
For the rice:
300 grams jasmine rice

Instructions
1Cut the chicken fillets into cubes and place them in a bowl. Add the cornstarch and mix well.
2Heat the oil in a wok over medium-high heat. Fry the chicken cubes in batches until golden brown and crispy. Drain on kitchen paper.
3Meanwhile, finely chop the bell peppers, spring onions, and garlic.
4Make the sauce by mixing all the ingredients in a bowl.
5Remove the excess oil from the wok and add the bell peppers and garlic. Stir-fry for 2 minutes.
6Add the sauce and bring to a boil. Add the crispy chicken and mix well.
7Meanwhile, cook the jasmine rice according to the instructions on the package.
8Serve the chicken with the sauce over the rice and sprinkle with the spring onions. It will turn out great!
