2 zucchinis
2 red bell peppers
200 grams cherry tomatoes
4 cloves of garlic
200 grams almonds
200 grams white rice

Instructions
1Preheat the oven to 200 degrees Celsius.
2Cut the zucchini and bell pepper into pieces and place them on a baking sheet along with the cherry tomatoes. Add the garlic cloves and sprinkle with fresh thyme, pepper, and salt.
3Drizzle the vegetables with 2 tablespoons of olive oil and roast them in the oven for about 20 minutes until they are nicely colored and tender.
4While the vegetables are roasting, cook the rice according to the instructions on the package. Add the almonds in the last 5 minutes.
5Heat the remaining olive oil in a pan and grill the cod fillets for about 4 minutes on each side until they are golden brown and cooked through.
