Ingredients

  • large cauliflower
  • 200 grams of shrimp, peeled and cleaned
  • cloves of garlic, finely chopped
  • red chili pepper, seeds removed and finely chopped
  • tablespoons of coconut oil
  • bunch of cilantro, finely chopped
  •  Juice of 1 lime
  •  Salt and pepper to taste

Instructions

  1. 1 Clean the cauliflower and cut it into florets. Grind the florets in a food processor until they resemble rice.
  2. 2 Heat the coconut oil in a large skillet and sauté the garlic and red chili pepper.
  3. 3 Add the shrimp to the pan and cook until they turn pink.
  4. 4 Add the cauliflower rice to the pan and sauté until warm.
  5. 5 Season with lime juice, salt, and pepper.
  6. 6 Serve the cauliflower rice with shrimp and garnish with fresh cilantro. Enjoy!
