Ingredients
1 large cauliflower
200 grams of shrimp, peeled and cleaned
2 cloves of garlic, finely chopped
1 red chili pepper, seeds removed and finely chopped
2 tablespoons of coconut oil
1 bunch of cilantro, finely chopped
Juice of 1 lime
Salt and pepper to taste

Instructions
1Clean the cauliflower and cut it into florets. Grind the florets in a food processor until they resemble rice.
2Heat the coconut oil in a large skillet and sauté the garlic and red chili pepper.
3Add the shrimp to the pan and cook until they turn pink.
4Add the cauliflower rice to the pan and sauté until warm.
5Season with lime juice, salt, and pepper.
6Serve the cauliflower rice with shrimp and garnish with fresh cilantro. Enjoy!
