4 smoked chicken breasts
200 grams quinoa
2 limes
A bunch of fresh coriander
1 red onion
2 cloves of garlic
2 tablespoons olive oil
Salt and pepper to taste

Instructions
1Cook the quinoa according to the instructions on the package.
2Meanwhile, finely chop the red onion and garlic.
3Heat a tablespoon of olive oil in a pan and sauté the onion and garlic.
4Add the cooked quinoa to the pan and stir well.
5Zest one lime and squeeze the juice from both limes. Add this to the quinoa along with finely chopped coriander, salt, and pepper.
6Slice the smoked chicken breast and serve on the quinoa.
