400 g Shrimp
2 tablespoons Thai curry paste
400 ml Coconut milk
1 Red bell pepper
200 g Sugar snap peas
1 Bunch of fresh cilantro
2 Limes
Olive oil
Salt and pepper

Instructions
1Heat a large pan with a little olive oil over medium-high heat.
2Add the curry paste and stir until fragrant.
3Add the shrimp and cook until they turn pink. Remove them from the pan and set aside.
4Add the bell pepper and sugar snap peas to the pan and sauté for a few minutes.
5Add the coconut milk and mix everything well. Bring to a boil.
6Add the shrimp back in and let it simmer for another 5 minutes.
7Serve the curry with fresh cilantro and a lime wedge. Enjoy!
