Ingredients

  • 200 g tofu, cubed
  • red bell pepper, sliced
  • yellow bell pepper, sliced
  • carrots, thinly sliced
  • zucchini, sliced into half moons
  • 200 g quinoa
  • tablespoons soy sauce
  • tablespoon honey
  • clove garlic, minced
  • teaspoon grated fresh ginger
  • tablespoons olive oil
  •  Salt and pepper to taste

Instructions

  1. 1 In a bowl, mix the soy sauce, honey, garlic, and ginger. Add the tofu and let marinate for 15 minutes.

  3. 3 Heat 1 tablespoon of oil in a wok or large pan. Add the tofu and cook until golden brown. Remove the tofu from the pan and set aside.
