Ingredients
200 g tofu, cubed
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 carrots, thinly sliced
1 zucchini, sliced into half moons
200 g quinoa
2 tablespoons soy sauce
1 tablespoon honey
1 clove garlic, minced
1 teaspoon grated fresh ginger
2 tablespoons olive oil
Salt and pepper to taste

Instructions
1In a bowl, mix the soy sauce, honey, garlic, and ginger. Add the tofu and let marinate for 15 minutes.
2Meanwhile, cook the quinoa according to package instructions.
3Heat 1 tablespoon of oil in a wok or large pan. Add the tofu and cook until golden brown. Remove the tofu from the pan and set aside.
4Add the remaining oil to the pan. Add the vegetables and stir-fry for 5-7 minutes, or until tender.
