  • large sweet potatoes
  • 400 grams chicken breast
  • ripe avocados
  • red onions
  • cloves of garlic
  • lime
  • bunch of coriander
  • teaspoon paprika powder
  •  Olive oil
  •  Salt and pepper

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius.
  2. 2 Wash the sweet potatoes and prick them with a fork. Bake them in the oven for about 45 minutes until they are soft.
  3. 3 Meanwhile, cut the chicken breast into cubes and marinate them with the lime juice, paprika powder, salt, and pepper.
  4. 4 Heat some olive oil in a pan and cook the chicken breast until it is done.
  5. 5 Finely chop the onions and garlic and add them to the pan. Cook until the onion is translucent.
  6. 6 Cut the avocados in half, remove the pit, and scoop out the flesh. Mash the flesh with a fork and add it to the pan.
  7. 7 Remove the sweet potatoes from the oven and cut them in half lengthwise. Scoop out some of the flesh to make room for the filling.
  8. 8 Divide the chicken-avocado mixture over the sweet potatoes.
  9. 9 Garnish with fresh coriander and serve immediately. Enjoy your meal!
