Chef's Special: Sweet Potato Boats with Chicken and Avocado

4 large sweet potatoes
400 grams chicken breast
2 ripe avocados
2 red onions
2 cloves of garlic
1 lime
1 bunch of coriander
1 teaspoon paprika powder
Olive oil
Salt and pepper

Instructions
1Preheat the oven to 200 degrees Celsius.
2Wash the sweet potatoes and prick them with a fork. Bake them in the oven for about 45 minutes until they are soft.
3Meanwhile, cut the chicken breast into cubes and marinate them with the lime juice, paprika powder, salt, and pepper.
4Heat some olive oil in a pan and cook the chicken breast until it is done.
5Finely chop the onions and garlic and add them to the pan. Cook until the onion is translucent.
6Cut the avocados in half, remove the pit, and scoop out the flesh. Mash the flesh with a fork and add it to the pan.
7Remove the sweet potatoes from the oven and cut them in half lengthwise. Scoop out some of the flesh to make room for the filling.
8Divide the chicken-avocado mixture over the sweet potatoes.
9Garnish with fresh coriander and serve immediately. Enjoy your meal!
