400 g large shrimp, peeled and deveined
2 tablespoons olive oil
1 large onion, sliced
2 cloves of garlic, minced
1 red bell pepper, sliced
200 ml coconut milk
2 tablespoons Thai red curry paste
1 tablespoon fish sauce
1 tablespoon sugar
Salt to taste
Fresh cilantro for garnish
200 g Jasmin rice

Instructions
1Heat the oil in a wok or large skillet over medium-high heat. Add the onion and bell pepper and cook for 3-4 minutes until soft.
2Add the garlic and curry paste to the pan and stir well. Cook for another 1-2 minutes.
3Add the shrimp and cook until they turn pink.
4Add the coconut milk, fish sauce, and sugar. Stir everything together and let it simmer for 5-10 minutes until the sauce slightly thickens.
5Meanwhile, cook the Jasmin rice according to the package instructions.
6Serve the curry over the rice and garnish with fresh cilantro. Enjoy!
