Ingredients

  • 400 g large shrimp, peeled and deveined
  • tablespoons olive oil
  • large onion, sliced
  • cloves of garlic, minced
  • red bell pepper, sliced
  • 200 ml coconut milk
  • tablespoons Thai red curry paste
  • tablespoon fish sauce
  • tablespoon sugar
  •  Salt to taste
  •  Fresh cilantro for garnish
  • 200 g Jasmin rice

Instructions

  1. 1 Heat the oil in a wok or large skillet over medium-high heat. Add the onion and bell pepper and cook for 3-4 minutes until soft.
  2. 2 Add the garlic and curry paste to the pan and stir well. Cook for another 1-2 minutes.
  3. 3 Add the shrimp and cook until they turn pink.
  4. 4 Add the coconut milk, fish sauce, and sugar. Stir everything together and let it simmer for 5-10 minutes until the sauce slightly thickens.
