1 clove garlic, minced
200 grams fresh spinach
200 ml crème fraîche
4 sweet potatoes

Instructions
1Preheat the oven to 200 degrees Celsius.
2Cut the sweet potatoes into cubes and spread them in a single layer on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast in the oven for 25-30 minutes, or until crispy and golden brown.
3While the potatoes are roasting, heat the remaining olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown and cooked through on both sides. Remove them from the pan and set aside.
