1 can of chickpeas (400g), drained
1 teaspoon cumin
1 teaspoon paprika powder
1/2 teaspoon cayenne pepper
1/2 red cabbage, thinly sliced
2 carrots, grated
1 red bell pepper, thinly sliced
8 small tortillas
For the salsa:
2 ripe tomatoes, diced
1/2 red onion, finely chopped
Juice of 1 lime
Handful of fresh coriander, finely chopped
Salt and pepper to taste

Instructions
1Heat a pan over medium-high heat. Add the chickpeas along with the cumin, paprika powder, and cayenne pepper. Cook for about 5 minutes until the chickpeas are warm and crispy.
2Meanwhile, make the salsa by mixing the tomatoes, red onion, lime juice, and coriander in a bowl. Season with salt and pepper.
3Divide the red cabbage, carrot, and bell pepper over the tortillas. Add the chickpeas and spoon the salsa over them.
