Ingredients

  • can of chickpeas (400g), drained
  • teaspoon cumin
  • teaspoon paprika powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 red cabbage, thinly sliced
  • carrots, grated
  • red bell pepper, thinly sliced
  • small tortillas
  •  For the salsa:
  • ripe tomatoes, diced
  • 1/2 red onion, finely chopped
  •  Juice of 1 lime
  •  Handful of fresh coriander, finely chopped
  •  Salt and pepper to taste

Instructions

  1. 1 Heat a pan over medium-high heat. Add the chickpeas along with the cumin, paprika powder, and cayenne pepper. Cook for about 5 minutes until the chickpeas are warm and crispy.
  2. 2 Meanwhile, make the salsa by mixing the tomatoes, red onion, lime juice, and coriander in a bowl. Season with salt and pepper.
