400 g shrimp, peeled and cleaned
1 tsp turmeric
1 tsp chili powder
2 tbsp vegetable oil
2 onions, finely chopped
4 cloves of garlic, finely chopped
2 cm fresh ginger, grated
400 ml coconut milk
2 tbsp fish sauce
1 tsp sugar
For the orange rice:
200 g basmati rice
Juice and zest of 1 orange
400 ml water
1 tbsp olive oil
Salt to taste

Instructions
1Marinate the shrimp in the turmeric and chili powder. Let it sit for 10 minutes.
2Heat the oil in a wok or large pan and sauté the onions, garlic, and ginger until soft.
3Add the marinated shrimp and cook until they turn pink.
4Add the coconut milk, fish sauce, and sugar. Let it simmer for 10-15 minutes.
5While the curry simmers, prepare the orange rice. Cook the rice with the orange juice, water, olive oil, and salt until the rice is done and has absorbed all the liquid.
