Chef's Thai Shrimp Soup with Lemongrass and Coconut

400 grams large peeled shrimp
2 stalks lemongrass
1 liter chicken broth
400 ml coconut milk
1 red chili pepper
3 cloves of garlic
1 lime
2 tablespoons fish sauce
3 spring onions
Handful of fresh cilantro

Instructions
1Slice the lemongrass and chili pepper into thin rings and finely chop the garlic.
2Bring the chicken broth to a boil in a large pot and add lemongrass, chili, and garlic. Let it simmer gently for 10 minutes.
3Then add the coconut milk, fish sauce, and lime juice. Bring it back to a boil.
4Add the shrimp to the soup and let it cook for 3-4 minutes, or until they turn pink.
5Garnish the soup with finely sliced spring onions and fresh cilantro. Serve immediately. This will add extra flavor and a beautiful presentation!
