Chef's Thai Shrimp Soup with Lemongrass and Coconut
This warming and flavorful Thai soup is a true chef's special. The combination of spicy shrimp, refreshing lemongrass, and creamy coconut milk creates a true taste explosion. And the best part of all? It's quick, easy to make, and super healthy! No stress, it will turn out great!

400 grams large peeled shrimp

2 stalks lemongrass

1 liter chicken broth

400 ml coconut milk

1 red chili pepper

3 cloves of garlic

1 lime

2 tablespoons fish sauce

3 spring onions

Handful of fresh cilantro
Instructions

Slice the lemongrass and chili pepper into thin rings and finely chop the garlic.

Bring the chicken broth to a boil in a large pot and add lemongrass, chili, and garlic. Let it simmer gently for 10 minutes.

Then add the coconut milk, fish sauce, and lime juice. Bring it back to a boil.

Add the shrimp to the soup and let it cook for 3-4 minutes, or until they turn pink.
