4 turkey breasts
2 large sweet potatoes
2 zucchinis
2 red bell peppers
2 tablespoons olive oil

100 grams butter
2 cloves garlic
2 tablespoons finely chopped fresh parsley

Instructions
1Preheat the oven to 200 degrees Celsius.
2Wash the sweet potatoes and cut them into cubes. Place them on a baking sheet lined with parchment paper, drizzle with olive oil, and season with salt and pepper. Roast them in the oven for 20-25 minutes.
3Cut the zucchinis and bell peppers into pieces. Grill the vegetables over medium-high heat on a grill pan until they are soft but still crispy.
4Heat a pan with olive oil and cook the turkey breasts on both sides until cooked through. Season with salt and pepper.
5For the herb butter: melt the butter in a saucepan, add the finely chopped garlic and parsley, and stir well.
