4 large sweet potatoes, peeled and cut into thin strips
2 tablespoons olive oil
Salt and pepper to taste
200 g low-fat Greek yogurt
Handful of fresh basil leaves, finely chopped
Juice of half a lemon
1 clove of garlic, finely chopped

Instructions
1Preheat the oven to 200 degrees and line a baking sheet with parchment paper.
2Toss the sweet potato strips with the olive oil, salt, and pepper and spread them out in a single layer on the baking sheet.
3Bake for about 25-30 minutes in the oven, or until golden brown and crispy. Flip them halfway through for even browning!
