2 pre-cooked beets
1 liter vegetable broth
1 onion
2 cloves of garlic
100 grams soft goat cheese
50 grams chopped walnuts
2 tablespoons olive oil

Instructions
1Finely chop the onion and crush the garlic.
2Heat the olive oil in a pan and sauté the onion and garlic until translucent.
3Add the risotto rice and fry until the grains are translucent.
4Gradually add the vegetable broth, stirring regularly. This process takes about 20 minutes.
5Meanwhile, cut the pre-cooked beets into small cubes and add them to the risotto after 15 minutes.
