  • pre-cooked beets
  • liter vegetable broth
  • onion
  • cloves of garlic
  • 100 grams soft goat cheese
  • 50 grams chopped walnuts
  • tablespoons olive oil
  •  Salt and pepper to taste

Instructions

  1. 1 Finely chop the onion and crush the garlic.
  2. 2 Heat the olive oil in a pan and sauté the onion and garlic until translucent.
  3. 3 Add the risotto rice and fry until the grains are translucent.
  4. 4 Gradually add the vegetable broth, stirring regularly. This process takes about 20 minutes.
  5. 5 Meanwhile, cut the pre-cooked beets into small cubes and add them to the risotto after 15 minutes.
