Delicious Blueberry Quark Cake No Bake
This delicious dessert is super easy to make, looks fantastic, and tastes even better! It is the perfect ending to any dinner or a delightful treat during a cozy afternoon coffee. And the best part is: you don't even have to bake! Perfect for summer, or whenever you're in the mood for a fruity treat.
Ingredients

200 g Digestive biscuits

100 g unsalted butter

500 g low-fat quark

200 g fresh or frozen blueberries

4 tbsp honey

1 lemon (juice & zest)

12 g gelatin powder

100 ml water

Crumble the Digestive biscuits in a food processor until fine crumbs.

Melt the butter in a saucepan and add the biscuit crumbs. Mix well and press this mixture into a springform pan. Press it down well with the back of a spoon and refrigerate to set.

Heat the water and add the gelatin. Stir until the gelatin is completely dissolved and remove from heat.

In a large bowl, mix the quark, honey, lemon juice and zest. Add the gelatin mixture and stir well.

Spread the quark mixture over the biscuit base and smooth with a spatula. Sprinkle the blueberries on top and press them lightly into the quark.

Refrigerate the cake for at least 4 hours to set.

Remove the cake from the refrigerator, cut into 4 pieces, and serve. Enjoy!
