Ingredients

  • chicken breasts
  • cups mixed greens (arugula, spinach, radicchio)
  • red bell peppers
  • yellow bell peppers
  • cucumber
  • cup cherry tomatoes
  • 1/2 cup olives
  • 1/2 cup Parmesan cheese
  •  For the marinade/dressing:
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • cloves garlic, minced
  • teaspoon oregano
  •  Salt and pepper to taste

Instructions

  1. 1 Mix the ingredients for the marinade/dressing in a bowl. Place the chicken breasts in half of the marinade and let rest for 30 minutes. Save the other half to use later as dressing.
  2. 2 Preheat a grill pan over medium-high heat. Add the chicken breasts and grill for 7 minutes on each side, or until fully cooked. Let the chicken rest before slicing.
  3. 3 While the chicken rests, prepare the salad. Toss the greens, tomatoes, and olives in a large bowl. Add the sliced chicken.
