Ingredients
4 chicken breasts
8 cups mixed greens (arugula, spinach, radicchio)
2 red bell peppers
2 yellow bell peppers
1 cucumber
1 cup cherry tomatoes
1/2 cup olives
1/2 cup Parmesan cheese
For the marinade/dressing:
1/2 cup balsamic vinegar
1/4 cup olive oil
2 cloves garlic, minced
1 teaspoon oregano
Salt and pepper to taste

Instructions
1Mix the ingredients for the marinade/dressing in a bowl. Place the chicken breasts in half of the marinade and let rest for 30 minutes. Save the other half to use later as dressing.
2Preheat a grill pan over medium-high heat. Add the chicken breasts and grill for 7 minutes on each side, or until fully cooked. Let the chicken rest before slicing.
3While the chicken rests, prepare the salad. Toss the greens, tomatoes, and olives in a large bowl. Add the sliced chicken.
4Pour the remaining dressing over the salad and toss well. Sprinkle the salad with Parmesan cheese and serve immediately. Enjoy!
