Ingredients

  • 300 grams green lentils
  • tablespoons olive oil
  • onion, finely chopped
  • cloves of garlic, finely chopped
  • teaspoons garam masala
  • teaspoon turmeric
  • teaspoon cumin
  • can of tomato paste
  • 400 ml coconut milk
  •  salt and pepper to taste
  •  fresh coriander for garnish

Instructions

  1. 1 Rinse the lentils under running water and let them drain.
  2. 2 Heat the olive oil in a large pan and sauté the onion and garlic until translucent.
  3. 3 Add the garam masala, turmeric, and cumin and sauté for a moment to release the flavors.
  4. 4 Add the tomato paste and lentils and stir well.
  5. 5 Pour in the coconut milk and bring to a boil. Let the curry simmer gently for 30 minutes, or until the lentils are cooked.
