Delicious Veggie Lasagna with Spinach and Ricotta

12 lasagna sheets

1 large onion, chopped

2 cloves of garlic, minced

400 grams fresh spinach

250 grams ricotta cheese

400 grams diced tomatoes (canned)

100 grams grated cheese

2 tablespoons olive oil

Salt and pepper to taste

Preheat the oven to 200 degrees Celsius.

Heat the olive oil in a large pan and sauté the onion and garlic until translucent.

Add the spinach and let it wilt. Then add the diced tomatoes and let it simmer for a few minutes.

Add the ricotta to the spinach-tomato mixture and stir well. Season with salt and pepper.

Layer the lasagna in a baking dish. Start with a layer of the spinach-ricotta mixture, place lasagna sheets on top, and repeat until all ingredients are used up. Finish with a layer of spinach-ricotta mixture.
