Ingredients

  • large sweet potatoes
  • can chickpeas (400g)
  • can tomato pulp (400g)
  • onion, chopped
  • cloves of garlic, minced
  • tablespoon curry powder
  • teaspoon cumin seeds
  • teaspoon turmeric
  • can coconut milk (400ml)
  •  Fresh coriander (optional)
  •  Salt and pepper to taste

Instructions

  1. 1 Peel the sweet potatoes and cut them into cubes.
  2. 2 Heat a little oil in a large pan and sauté the onion and garlic until soft.
  3. 3 Add the curry powder, cumin, and turmeric and stir well.
  4. 4 Add the sweet potatoes, chickpeas, and tomato pulp and mix everything well.
  5. 5 Add the coconut milk, bring to a boil, and let simmer for 20 minutes until the sweet potatoes are soft.
  6. 6 Season with salt and pepper and garnish with fresh coriander if desired.
