500 grams chicken breast, diced
2 tablespoons curry powder
1 large onion, finely chopped
2 cloves of garlic, finely chopped
1 red bell pepper, diced
400 grams canned diced tomatoes
200 ml coconut milk
2 tablespoons olive oil
Salt and pepper to taste
Fresh coriander, for garnish

Instructions
1Heat the olive oil in a large pan over medium-high heat.
2Add the onion and garlic and cook until soft and fragrant.
3Add the chicken pieces and cook until browned, about 5-7 minutes.
4Sprinkle the curry powder over the chicken and stir well.
5Add the bell pepper and diced tomatoes, and stir everything together. Let it simmer for 10 minutes.
6Pour in the coconut milk and let it simmer for another 5 minutes.
